Description
A hearty Greek chickpea soup packed with flavor.
Ingredients

- 1 cup dried chickpeas
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon thyme
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions
- Soak chickpeas overnight in water.
- Drain and rinse chickpeas.
- In a pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Add chickpeas, broth, tomatoes, oregano, and thyme.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add salt, pepper, and lemon juice.
- Garnish with parsley before serving.
Notes
- For quicker cooking, use canned chickpeas.
- Adjust seasoning to your taste.
- Store leftovers in the fridge for up to 3 days.
