Ingredients

  • 1 cup dried chickpeas
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. Soak chickpeas overnight in water.
  2. Drain and rinse chickpeas.
  3. In a pot, sauté onion, carrots, and celery until soft.
  4. Add garlic and cook for 1 minute.
  5. Add chickpeas, broth, tomatoes, oregano, and thyme.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Add salt, pepper, and lemon juice.
  8. Garnish with parsley before serving.

Notes

  • For quicker cooking, use canned chickpeas.
  • Adjust seasoning to your taste.
