Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil potatoes until tender, about 15-20 minutes.
  2. Drain and cool the potatoes.
  3. In a large bowl, combine potatoes, tomatoes, onion, cucumber, feta, and olives.
  4. In a small bowl, whisk together olive oil, vinegar, oregano, salt, and pepper.
  5. Pour dressing over the salad and toss gently.
  6. Chill in the refrigerator for at least 30 minutes before serving.
