Description

A quick and easy recipe for chicken and rice made in an Instant Pot.


Ingredients

Scale
  • 1 pound chicken breast
  • 1 cup rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Set the Instant Pot to sauté mode.
  2. Add olive oil and sauté onions and garlic until fragrant.
  3. Add chicken breast and brown on both sides.
  4. Remove chicken and set aside.
  5. Add rice and chicken broth to the pot.
  6. Place the chicken on top of the rice.
  7. Seal the Instant Pot and cook on high pressure for 10 minutes.
  8. Allow natural release for 10 minutes, then quick release remaining pressure.
  9. Fluff the rice and serve hot.

Notes

  • Adjust seasoning according to your taste.
  • You can add vegetables like peas or carrots.
  • Leftovers can be stored in the refrigerator for up to 3 days.
