Description
A quick and easy recipe for chicken and rice made in an Instant Pot.
Ingredients

- 1 pound chicken breast
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- Set the Instant Pot to sauté mode.
- Add olive oil and sauté onions and garlic until fragrant.
- Add chicken breast and brown on both sides.
- Remove chicken and set aside.
- Add rice and chicken broth to the pot.
- Place the chicken on top of the rice.
- Seal the Instant Pot and cook on high pressure for 10 minutes.
- Allow natural release for 10 minutes, then quick release remaining pressure.
- Fluff the rice and serve hot.
Notes
- Adjust seasoning according to your taste.
- You can add vegetables like peas or carrots.
- Leftovers can be stored in the refrigerator for up to 3 days.
