A hearty and flavorful Italian Meatball Soup that warms you up.
Ingredients

- 1 pound ground beef
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 cups beef broth
- 1 can diced tomatoes
- 2 cups spinach
- 1 carrot, diced
- 1 onion, chopped
- 1 tablespoon olive oil
Instructions
- In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
- Form the mixture into small meatballs.
- In a pot, heat olive oil over medium heat. Add onion and carrot, sauté until soft.
- Add meatballs and cook until browned on all sides.
- Pour in beef broth and diced tomatoes. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add spinach and cook for an additional 5 minutes.
- Serve hot.
