- 2 cups ricotta cheese
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon zest
- 1/2 teaspoon almond extract
- 1 pie crust
- 1/4 cup raisins
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix ricotta cheese and sugar until smooth.
- Add eggs, vanilla extract, lemon zest, and almond extract. Mix well.
- Fold in raisins.
- Pour the mixture into the pie crust.
- Bake for 45 minutes or until set.
- Let it cool before serving.
Notes
- Serve chilled for better flavor.
- Can be topped with powdered sugar.
- Substitute raisins with chocolate chips if desired.
