A comforting and hearty lasagna soup that combines all the flavors of traditional lasagna in a bowl.

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 2 cups water
- 1 tsp Italian seasoning
- 8 oz lasagna noodles, broken
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, brown the ground beef with onion and garlic.
- Add crushed tomatoes, beef broth, water, and Italian seasoning. Bring to a boil.
- Stir in the broken lasagna noodles. Cook until noodles are tender.
- Reduce heat and stir in ricotta cheese.
- Serve hot, topped with mozzarella and Parmesan cheese.
Notes
- Use ground turkey for a lighter option.
- Adjust seasonings to taste.
- For a vegetarian version, omit meat and add vegetables.
