Description
A low-carb twist on the classic Reuben sandwich served in a bowl.
Ingredients

- 1 cup cooked corned beef, shredded
- 1 cup sauerkraut, drained
- 1/2 cup Swiss cheese, shredded
- 1/4 cup thousand island dressing
- 1 tablespoon olive oil
- 1 teaspoon caraway seeds
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add shredded corned beef and sauté for 2-3 minutes.
- Stir in sauerkraut and caraway seeds; cook until heated through.
- Remove from heat and top with Swiss cheese.
- Cover to melt cheese, about 1-2 minutes.
- Drizzle with thousand island dressing before serving.
Notes
- Can substitute turkey for corned beef.
- Adjust the amount of dressing to taste.
- For extra flavor, add chopped onions or peppers.
