A low-carb twist on the classic Reuben sandwich served in a bowl.


Ingredients

  • 1 cup sauerkraut, drained

  • 1/4 cup thousand island dressing

  • 1 teaspoon caraway seeds

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add shredded corned beef and sauté for 2-3 minutes.
  3. Stir in sauerkraut and caraway seeds; cook until heated through.
  4. Remove from heat and top with Swiss cheese.
  5. Cover to melt cheese, about 1-2 minutes.
  6. Drizzle with thousand island dressing before serving.
