Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the tart shell in the oven and bake for 10 minutes until lightly golden.
  3. In a saucepan, combine mango, passionfruit pulp, sugar, and water.
  4. Heat over medium heat until the mixture simmers.
  5. In a small bowl, mix cornstarch with a bit of water to create a slurry.
  6. Add the slurry to the fruit mixture and stir until thickened.
  7. Remove from heat and stir in vanilla extract.
  8. Pour the filling into the baked tart shell.
  9. Let it cool at room temperature, then refrigerate for at least 2 hours before serving.
