- 1 pre-made tart shell
- 2 ripe mangoes, peeled and diced
- 1/2 cup passionfruit pulp
- 1/2 cup sugar
- 1/4 cup heavy cream
- 2 tablespoons cornstarch
- 1/4 cup water
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Place the tart shell in the oven and bake for 10 minutes until lightly golden.
- In a saucepan, combine mango, passionfruit pulp, sugar, and water.
- Heat over medium heat until the mixture simmers.
- In a small bowl, mix cornstarch with a bit of water to create a slurry.
- Add the slurry to the fruit mixture and stir until thickened.
- Remove from heat and stir in vanilla extract.
- Pour the filling into the baked tart shell.
- Let it cool at room temperature, then refrigerate for at least 2 hours before serving.
Notes
- Serve chilled for the best flavor.
- Garnish with fresh mango slices or mint leaves if desired.
