Ingredients

  • Unsalted butter – 1/2 cup (113 g), softened
  • Brown sugar – 1 cup (200 g), packed
  • Molasses – 1/2 cup (120 ml)
  • Eggs – 2 large
  • Orange zest – 1 tablespoon (from about 1 orange)
  • Orange juice – 1/4 cup (60 ml)
  • Vanilla extract – 1 teaspoon
  • Powdered sugar – 1 cup (120 g)
  • Orange juice – 2-3 tablespoons (30-45 ml)
  • Orange zest – 1 teaspoon (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground ginger, ground nutmeg, ground cloves, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.
  4. Add the molasses, eggs, orange zest, orange juice, and vanilla extract to the butter mixture. Beat until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  7. In a small bowl, whisk together the powdered sugar and orange juice until smooth. Adjust the consistency as needed.
  8. Once the cake is cooled, drizzle the orange glaze over the top and garnish with additional orange zest if desired.
