Description

A delicious and healthy lasagna made with mushrooms and spinach.


Ingredients

  • 9 lasagna noodles
  • 2 cups spinach
  • 2 cups mushrooms, sliced
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a pan, sauté mushrooms until soft. Add spinach and cook until wilted.
  4. In a bowl, mix ricotta cheese with garlic powder, onion powder, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, half of the ricotta mixture, half of the mushroom and spinach mixture, and a third of the mozzarella.
  7. Repeat the layers, finishing with noodles and remaining marinara sauce.
  8. Top with remaining mozzarella and parmesan cheese.
  9. Cover with foil and bake for 30 minutes.
  10. Remove foil and bake for another 15 minutes until cheese is golden.
  11. Let it cool for 10 minutes before serving.

Notes

  • You can substitute cottage cheese for ricotta.
  • Add herbs like basil or oregano for extra flavor.
  • This dish can be made ahead and stored in the fridge.
