Description
A delicious and healthy lasagna made with mushrooms and spinach.
Ingredients

- 9 lasagna noodles
- 2 cups spinach
- 2 cups mushrooms, sliced
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- In a pan, sauté mushrooms until soft. Add spinach and cook until wilted.
- In a bowl, mix ricotta cheese with garlic powder, onion powder, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta mixture, half of the mushroom and spinach mixture, and a third of the mozzarella.
- Repeat the layers, finishing with noodles and remaining marinara sauce.
- Top with remaining mozzarella and parmesan cheese.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 15 minutes until cheese is golden.
- Let it cool for 10 minutes before serving.
Notes
- You can substitute cottage cheese for ricotta.
- Add herbs like basil or oregano for extra flavor.
- This dish can be made ahead and stored in the fridge.
