Ingredients

  • 3 cups chopped tomatoes
  • 2 cups chopped onions
  • 1 cup vegetable oil
  • 2 cups chopped bell peppers
  • 4 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • 2 teaspoons thyme
  • 2 teaspoons curry powder
  • Salt to taste
  • Black pepper to taste
  • 2 cups chicken broth

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onions and sauté until translucent.
  3. Add garlic and ginger, cook for 2 minutes.
  4. Add chicken pieces, browning them on all sides.
  5. Add tomatoes, bell peppers, thyme, curry powder, salt, and pepper.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat and simmer for 30 minutes or until chicken is cooked through.
  8. Adjust seasoning as needed and serve hot.
