A flavorful Nigerian chicken stew made with tomatoes, peppers, and spices.
Ingredients

- 1 kg chicken, cut into pieces
- 3 cups chopped tomatoes
- 2 cups chopped onions
- 1 cup vegetable oil
- 2 cups chopped bell peppers
- 4 cloves garlic, minced
- 2 teaspoons ginger, minced
- 2 teaspoons thyme
- 2 teaspoons curry powder
- Salt to taste
- Black pepper to taste
- 2 cups chicken broth
Instructions
- Heat oil in a pot over medium heat.
- Add onions and sauté until translucent.
- Add garlic and ginger, cook for 2 minutes.
- Add chicken pieces, browning them on all sides.
- Add tomatoes, bell peppers, thyme, curry powder, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 30 minutes or until chicken is cooked through.
- Adjust seasoning as needed and serve hot.
Notes
- Serve with rice or bread.
- Can be made ahead and stored in the refrigerator.
- Adjust spice level by adding chili peppers if desired.
