Delicious and healthy pumpkin muffins made with cottage cheese.
Ingredients

- 1 cup pumpkin puree
- 1 cup cottage cheese
- 2 eggs
- 1 cup whole wheat flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, cottage cheese, and eggs.
- In another bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Pour the batter into muffin tins lined with paper liners.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool before serving.
Notes
- Store muffins in an airtight container.
- Can substitute sugar with honey or maple syrup.
- Try adding chocolate chips for extra flavor.
