A hearty and comforting ravioli soup.
Ingredients

- 2 cups vegetable broth
- 1 cup water
- 1 package (9 oz) refrigerated cheese ravioli
- 1 cup spinach leaves
- 1 medium carrot, diced
- 1 stalk celery, diced
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat.
- Add onion, carrot, celery, and garlic. Sauté until vegetables soften.
- Pour in vegetable broth and water. Bring to a boil.
- Add ravioli and cook according to package instructions.
- Stir in spinach and Italian seasoning. Cook until spinach wilts.
- Season with salt and pepper. Serve hot.
Notes
- Use any type of ravioli you prefer.
- Add other vegetables for variety.
- Garnish with grated cheese if desired.
