Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Heat a large skillet over medium heat.
  2. Add the onion and garlic. Sauté until softened.
  3. Add the diced chicken and cook until browned.
  4. Stir in the chili powder, cumin, and paprika.
  5. Add the black beans, corn, and diced tomatoes.
  6. Mix in the cooked rice and stir until well combined.
  7. Season with salt and pepper to taste.
  8. If using, sprinkle cheese on top and cover until melted.

Notes

  • You can substitute brown rice for white rice.
  • Add more vegetables if desired.
