Ingredients

- 2 cups cooked rice
- 1 lb chicken fillet, diced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Heat a large skillet over medium heat.
- Add the onion and garlic. Sauté until softened.
- Add the diced chicken and cook until browned.
- Stir in the chili powder, cumin, and paprika.
- Add the black beans, corn, and diced tomatoes.
- Mix in the cooked rice and stir until well combined.
- Season with salt and pepper to taste.
- If using, sprinkle cheese on top and cover until melted.
Notes
- You can substitute brown rice for white rice.
- Add more vegetables if desired.
- This dish can be made ahead and reheated.
