Delicious strawberry crumb bars with a buttery crust and crumb topping.
Ingredients

- 2 cups fresh strawberries, diced
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine strawberries, sugar, lemon juice, and cornstarch. Set aside.
- In another bowl, mix flour, baking powder, and salt.
- In a large bowl, cream butter and brown sugar until smooth.
- Add vanilla and dry ingredients to the butter mixture. Mix until crumbly.
- Press half of the crumb mixture into a greased 9×9 inch baking dish.
- Spread the strawberry mixture over the crust.
- Sprinkle the remaining crumb mixture on top of the strawberries.
- Bake for 30-35 minutes until golden brown.
- Allow to cool before cutting into bars.
Notes
- Store leftovers in an airtight container.
- Use frozen strawberries if fresh ones are unavailable.
- Adjust sugar based on the sweetness of strawberries.
