Ingredients

For the Cake Layers:  

– 1 box of strawberry cake mix (plus ingredients as per package instructions)

OR  

– 2 ½ cups all-purpose flour

– 2 ½ tsp baking powder

– ½ tsp salt

– 1 ¾ cups granulated sugar

– ¾ cup unsalted butter, softened

– 4 large eggs

– ½ cup milk

– ½ cup strawberry puree

– 1 tsp vanilla extract

For the Frosting: 

– 1 cup unsalted butter, softened

– 4 cups powdered sugar

– 2–3 tbsp milk

– 1 tsp vanilla extract

– Optional: 2 tbsp strawberry puree for flavor

For the Crunch Topping: 

– 1 ½ cups vanilla sandwich cookies, crushed

– ½ cup freeze-dried strawberries, crushed

– 3 tbsp unsalted butter, melted


Instructions

Step 1: Bake the Cake Layers  

1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch cake pans.

2. If using a box mix, prepare the batter as instructed. For homemade: Cream butter and sugar until fluffy. Add eggs one at a time, mixing well. Combine flour, baking powder, and salt in a separate bowl. Alternate adding the dry ingredients and milk/strawberry puree to the butter mixture. Mix in vanilla extract.

3. Divide the batter evenly between the pans and bake for 25–30 minutes. Let the cakes cool completely before assembling.

Step 2: Prepare the Frosting  

1. Beat softened butter until smooth. Gradually add powdered sugar and continue mixing.

2. Add milk and vanilla extract to reach a creamy consistency. If desired, mix in strawberry puree for added flavor.

Step 3: Make the Crunch Topping  

1. In a bowl, combine crushed cookies, freeze-dried strawberries, and melted butter. Mix until crumbly. Set aside.

Step 4: Assemble the Cake  

1. Place one cake layer on a serving plate. Spread a layer of frosting evenly on top.

2. Add the second cake layer and frost the entire cake, smoothing the sides and top.

3. Press the crunch topping gently onto the sides and top of the cake.

Step 5: Decorate and Serve

1. Garnish with fresh strawberries or a drizzle of strawberry sauce, if desired.

2. Slice and serve!

Notes

– For a more vibrant crunch topping, use extra freeze-dried strawberries.

– Store leftovers in the refrigerator for up to 4 days.
