Description

Ingredients

  • 2 cups white beans, soaked overnight
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Drain and rinse the soaked beans.
  2. In a large pot, sauté onion, carrots, and celery until soft.
  3. Add garlic and cook for 1 minute.
  4. Add beans, broth, bay leaf, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Remove bay leaf and blend soup if desired for a creamy texture.
  7. Serve hot and enjoy.
