A hearty and nutritious white bean soup.
Ingredients

- 2 cups white beans, soaked overnight
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 bay leaf
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
Instructions
- Drain and rinse the soaked beans.
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Add beans, broth, bay leaf, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove bay leaf and blend soup if desired for a creamy texture.
- Serve hot and enjoy.

- Store leftovers in the refrigerator for up to 3 days.
- This soup freezes well.
