Ingredients
Scale
- 2 medium zucchini, grated
- 2 medium carrots, grated
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Oil for frying
Instructions
- Grate zucchini and carrots and place them in a bowl.
- Add flour, Parmesan cheese, eggs, garlic powder, salt, and pepper.
- Mix until well combined.
- Heat oil in a skillet over medium heat.
- Scoop mixture into the skillet, forming patties.
- Fry until golden brown on both sides.
- Remove and drain on paper towels.
Notes
- Serve hot with your favorite dipping sauce.
- Store leftovers in the refrigerator for up to 2 days.
