Description
A healthy and flavorful zucchini chickpea bake.
Ingredients
Scale
- 2 medium zucchinis, sliced
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine zucchinis, chickpeas, cherry tomatoes, and garlic.
- Add olive oil, oregano, salt, and pepper. Mix well.
- Transfer the mixture to a baking dish.
- Sprinkle feta cheese on top.
- Bake for 25-30 minutes, or until zucchinis are tender.
- Remove from oven and let cool for a few minutes before serving.
Notes
- Serve warm or at room temperature.
- Can be stored in the refrigerator for up to 3 days.
- Feel free to add other vegetables if desired.
