Ingredients

  • 2 medium zucchinis, sliced
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine zucchinis, chickpeas, cherry tomatoes, and garlic.
  3. Add olive oil, oregano, salt, and pepper. Mix well.
  4. Transfer the mixture to a baking dish.
  5. Sprinkle feta cheese on top.
  6. Bake for 25-30 minutes, or until zucchinis are tender.
  7. Remove from oven and let cool for a few minutes before serving.

  • Serve warm or at room temperature.
