Description
Zucchini Pizza Casserole is a healthy twist on traditional pizza. It combines zucchini, cheese, and your favorite pizza toppings in a baked dish.
Ingredients

- 4 medium zucchinis, sliced
- 1 pound ground beef or turkey
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup sliced bell peppers
- 1 cup sliced mushrooms
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add ground meat and cook until browned.
- Add bell peppers, mushrooms, Italian seasoning, salt, and pepper. Cook until vegetables are tender.
- Stir in marinara sauce and mix well.
- In a greased baking dish, layer half of the zucchini slices.
- Add half of the meat mixture on top of the zucchini.
- Sprinkle with one cup of mozzarella cheese.
- Repeat layers with remaining zucchini, meat mixture, and cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- You can substitute ground meat with sausage or keep it vegetarian.
- Feel free to add other toppings like olives or pepperoni.
