Ingredients

  • 4 medium zucchinis, sliced
  • 1 pound ground beef or turkey
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup sliced bell peppers
  • 1 cup sliced mushrooms
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add ground meat and cook until browned.
  3. Add bell peppers, mushrooms, Italian seasoning, salt, and pepper. Cook until vegetables are tender.
  4. Stir in marinara sauce and mix well.
  5. In a greased baking dish, layer half of the zucchini slices.
  6. Add half of the meat mixture on top of the zucchini.
  7. Sprinkle with one cup of mozzarella cheese.
  8. Repeat layers with remaining zucchini, meat mixture, and cheese.
  9. Bake for 25-30 minutes until cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.
