A refreshing and tangy cake made with strawberries and lemon.
Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 cup buttermilk
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh strawberries, chopped
Instructions
- Preheat oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until fluffy.
- Add eggs one at a time, beating well after each.
- Mix in lemon juice and zest.
- Alternately add flour mixture and buttermilk to the butter mixture.
- Fold in chopped strawberries.
- Pour batter into prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool the cakes in pans for 10 minutes, then remove from pans to cool completely.
Notes
- Use fresh strawberries for best flavor.
- Store leftovers in an airtight container.
- This cake pairs well with whipped cream.
